In summer, the blossoming fields of flax enchant the hilly landscapes of the Mühlviertel into a sea of blue flowers. Precious linen fabrics are made from the flax plant in the local linen weaving mills, and the valuable linseed oil is extracted from the plant seeds in the Mühlviertel oil mill at the Steinerne Mühl. Cold-pressed linseed oil in particular is a real fountain of youth.
Linseed oil apples are a particular culinary speciality of the Mühlviertel. They are served particularly well at Kulinarium Vonwiller in the weaving metropolis of Haslach.
Elke and Günther Wolfmayr serve the Mühlviertel regional speciality with plenty of healthy oil and strong seasoning. It is served with bread or salad.
The Wolfmayr's have given us their recipe for the delicious and healthy linseed oil potatoes. You should definitely give it a try.
For 4 persons
Cook the potatoes with the skin on, peel and cut into flakes. Pour hot milk over them and stir carefully. Refine with cream, season with salt (and pepper if necessary) and mix with linseed oil.
Caution: The linseed oil should never be heated too much, otherwise it will lose its valuable ingredients.
To serve, add a dash of linseed oil and chives or cress to taste.
