Hubert Leitner is a passionate goose farmer. He knows the animals well, he laughs when they chatter and enjoys watching them eat. Around 240 geese live on his farm in Pierbach from May to November. He is one of 27 pasture goose farms in the Mühlviertel and also chairman of the "Mühlviertler Weidegans" association. The grazing geese are marketed in the Mühlviertel exclusively directly by the goose farmers. With the designation "Mühlviertler Alm Weidegans" or/and "Mühlviertler Weidegans", the farmers guarantee the consistently high quality of the animals. Due to the grazing, the meat is more flavourful and finer-fibred. It has a lower fat content and is darker in colour due to the movement compared to geese without pasture. In addition, pastured geese have less water, which means less roasting loss and "more goose in the pan".
