Where the houses are closely packed to the cultural centre, a narrow alley used to lead to one of the last three breweries in the city centre - at that time still behind the Badstuben and next to the salt warehouse.
Over time, the brewery owners lost interest in brewing and so brewing licences were offered for sale and brewing regulations were violated. As the inadequacies that had crept in affected the quality of the beer brewed, the citizens with brewing rights joined together to form a community and bought the brewery behind the Badstuben in 1737. When the municipal wheat beer brewery was also taken over by the municipality in 1770, they had to undertake to build a brewery outside the city walls to avoid the risk of fire in the city centre.
