Course calendar – Stift Schlierbach Since 1999, organic cheese varieties have been produced in the Stiftskäserei. The original "Schlierbacher" is the oldest cheese variety, continuously produced since 1924. It is a surface-ripened soft cheese with a red culture. **Program:** During the tour, we will show you the Stifts facilities such as the Bernardisaal, the library, the cloister with the Schlierbacher Madonna, and the stained glass gallery followed by a cheese tasting. We also offer our guests cheese and wine tastings accompanied by a knowledgeable cheese and wine sommelier. Included Service: Schlierbach Cheese Tasting with Wine Pairing Variant I The tasting begins with mild, fine Schlierbach organic cheese specialties such as cow, sheep, or goat camembert. Then, fine organic semi-hard cheeses will be tasted. It gets flavorful with the organic Bacchus, which is marinated in red wine.
